Menu Planning Monday...on Tuesday!

Last week was a crazy week since our chest freezer broke and I had a lot of food to deal with, mostly chicken. For more meal plans and recipes, check out the Org Junkie! Here is what we ate last week:

Monday: Creamed Chicken over biscuits/mashed potatoes, veggies

Tuesday: Leftover Creamed Chicken over biscuits/mashed potatoes

Wednesday: Chicken Cordon Bleu, mashed potatoes, summer squash, corn on the cob. Mixed leftover Chicken Cordon Bleu with noodles for a couple lunches.

Thursday: Taco Bell before getting groceries/running errands

Friday: Burgers on the grill, corn side dish, baked beans

Saturday: Lunch was leftover burgers, dinner was a campfire with friends

Sunday: Breakfast was pancakes, dinner was a fish fry at my parents. I brought mocha brownies…SO GOOD!

This week:
Monday: Spicy Shake n Bake chicken, red beans n rice, green beans, garlic bread

Tuesday: Spaghetti and garlic bread, corn on the cob

Wednesday: Steak on the grill

Thursday: Orange Chicken

Friday: Sandwiches or who knows, our weekend plans are 100% in the air, either we are staying home or go to our in-laws. If we go to the in-laws, I’ll pack sandwiches to eat on the way.

Recipes:
Disclaimer: Nothing is too complicated, I promise. You’ll probably be amazed and disgusted at how easy/convenience laden my meals are. Sorry.

Creamed Chicken:
Made chicken gravy (from packet) and mixed in a can of cream of chicken soup, soup can of milk, bag of frozen mixed veggies and chopped chicken. Added milk to right consistency and let heat through.

Chicken Cordon Bleu:
Took already cooked chunks of chicken breast (off the bone) and wrapped them in ham. Laid a piece of Swiss cheese on top of that. Mixed half a jar of alfredo sauce with the last bit of creamed chicken and some milk and spices and poured on top. Sprinkled with chopped ham, cheese and French fried onions. Baked until hot.

Awesome Burgers:
Took about 1.5lbs lean ground round, mixed with 1 egg, a bunch of A-1 and monetary steak seasoning. Grill to perfection!
