Saturday I made apple cake, a dozen breakfast burritos, pizza cobbler, chicken breasts and chicken stock. We ate the apple cake and pizza cobbler for dinner. The cooked chicken, chicken stock and breakfast burritos are in the freezer for later use.
Sunday: Lunch was chicken sandwiches, dinner was stew over biscuits
Monday: Enchiladas, Spanish Rice. I made a triple batch of enchiladas last month and this is the first batch I have pulled out of the freezer.
Tuesday: Rotoni and meatballs, garlic bread. No different than spaghetti but hubby prefers rotoni noodles. I snagged a couple of boxes of Ronzoni Smart Tasta Rotoni for Free at Meijer last week. (On sale for $0.99, had $1 coupons!)
Wednesday: Chicken Pot pie! Will use some of the chicken I cooked over the weekend.
Thursday: Grilled cheese and tomato soup. It’s a great comfort food!
Friday: Leftovers or if there are none, brats on the grill. We need to squeeze in as much grilling as we can!
